Agree, I never really understood the concept or the whole meaning of variables. Plus they look very complicated.

Say you want to make a RPG. You don't want to download any cumbersome mods. What do you do? You can use complicated onRelay stuff, hundreds of random bricks doing random events, or you can shove it all into a few bricks and use VCE.
